I adapted my Chocolate Cake recipe to become a Coffee Cake and used Delia Smith’s Coffee Cream Mousseline (Book of Cakes, 3rd edition, 1990, Hodder & Stoughton, p.33) to fill the cakes with a coffee-flavoured version of her glace icing from the same book, p.60, over the top.
I am feeling sugared-out! The taste is yummy, and the mousseline rich, but I need a more distinctive ‘look’ for the cake before it appears inĀ The Cake Book
